Fry up some chopped onion, red pepper and garlic and saute it in a pan. Add herbs and spices... cumin, chili powder, dried chili flakes, smoked paprika, oregano, salt and pepper. Add chopped tomato and simmer for a few minutes to cook the tomato. Make wells and crack an egg into each one. Cover for 8-10 minutes depending on how runny you want the yolks. Garnish with cilantro and serve with toasted baguette or pita. |
