  No dear , at birth ! Well , actually emergence from the cell . They
come out fully grown and ready to go , the first thing they do is clean
out and polish up the cell they emerged from so it's ready for another

Last week I bought a bag 'Frontier Soups' 11 bean soup mix and it's simmering
away on the stove as I write. The bag came with a recipe which I've followed
and even though not completely done, it's shaping up to be quite good.
 
Their recipe called for a ham hock, 29 ounce can of Italian plum tomatoes, cut
up; diced onions, celery, bell pepper, garlic, and 12 cups of water. All I had was the large can of petite diced tomatoes so in it went after simmering for
three hours. At that time I fished out the two sliced ham hocks, and added the other requirements along with two 8-ounce packages of diced ham and one 8-ounce package of cubed ham. I thought I had grabbed two packages of cubed ham but no
matter; the ham hock went back in too, after picking off the fat and discarding
the bones.
 
The recipe on the package called for smoked Kielbasa and chicken breast
pieces but I decided to stick with all ham. Package proclaims it to be gluten
free for those interested.

Sounds good. I've used similar mixes like that with good results.
Sure, you can make good soups, but you'd not put together 11 different
beans for one so these mixes are handy for that.

In the interest of furthering the neverending discussion of how best
to make cornbread, I offer the following thoughts. Start as as folows.
 
4Tbs. Melted Butter, Margarine or Vegtable Oil (In that order of
preference)
1 Cup Cornmeal
1 Cup A/P Flour
Sugar--Anywher from nothing, if you're a True Southener, up to 1 Cup,
if you're A Damned Yankee. (My taste is about 1/4 Cup.)
1 Tbs. Baking Powder
1 Tsp. Baking Soda
1-2 Tsp. Salt
1/8-1/4 Tsp Nutmeg (*Yes! This matters!*)
1.5 Cups Buttermilk (strongly prefferable) or regular Milk
1-2 Eggs*
 
Grease a 10" skillet, and place it in a cold oven, and then pre-heat
it to 400 degrees Farenheight.
 
Mix the ingredients together (withold wet ingredients for as long as
possible), and pour into the fully heated skillet. Then bake at 400
degrees for 18-20 (posaibly 22) minutes.
 
* I've heard suggestions of 3 eggs. But I think that hurts the flavor.
I think that 3 eggs doesn't improve the rise (which it does), enough
to offset the detriment to flavor.
 
**With this said? I welcome vigorous debate. Have a quibble with this?
Feel free to say so. *EXCEPT* for one point. The Northern/Southern
thing. I.E.--sugar. That's a Holy War that just can not be resolved by
discussion. So let's not even try. ;)

None of these are needed if you buy self-rising cornmeal.

Mix dry ingredients 'for as long as possible.' Why? Should we be mixing for
10 minutes, an hour, all day??

I like Scotch.... and Irish. I like rye only with vermouth. Vodka is
nice knocked back ice cold. Rum and gin are also good sipping liquors.
