She slices the zucchini into rounds about 1/4 inch thick. She blanches them in boiling water, drains them and then fries them in a shallow pan with a lots of olive oil. They are browned on one side, about a minute or two. Then she flips them over and sprinkles them with grated Parmesan. |

About 30 years ago, Z stir-fried with cumin was served to me at a dinner party. I wish I had asked the hostess about the method as the ingredients were obvious. I've tried but have never been able to duplicate that dish. |
