I don't know about Thomas but I don't need three 12 inch cast iron
skillets. The cast iron skillet I cooked the tenderloin steak is about
6 inches in diameter. Perfect size for a small steak or a burger. I
have a 9" cast iron pan strictly used for baking cornbread. I rarely
use the 12 inch cast iron skillet. They're all at least 25-30 years
old; I don't recall what I paid for them. Probably $20 for all three. ;)

The 10# bags of leg quarters are from *retired* laying hens. That's why they're so large. Yeah, they're not a two month old fryer, but they were 39 cents a pound.

To celebrate this amazing holiday, last night's dinner was this savory zucchini galette from King Arthur Flour:

Zucchini, grape tomatoes, and fresh basil from our garden. It was excellent, IIDSSM. Along with our first regular tomatoes of the season (eaten plain, nothing else needed) and some sweet corn from the neighbor down the street, freshly picked.

It's a recipe from a local restaurant that I got in a newsletter years ago. I'll give you my slightly modified version:
 
5 lbs potatoes
 
4 cups 40% cream /w/ milk to thin (cooks off)
 
1-1.5 heads of fresh garlic (not the stuff in jars!)
 
1 tsp salt
 
1 tsp white pepper (black pepper works too, but makes black specks in the sauce!)
 
Gruyere swiss cheese
 
 
Peel (optional I suppose) and slice up the potatoes into chunk slices about 1/4 inch thick. Peel and mince the garlic, and I pare that little green plant out of the middle of each clove (A PITA, but it's kinda fun too!)
 
In a large pot, put the potato pieces, the cream, the garlic and the salt and pepper and bring to a gentle boil for about 10-15 mins. Thin with a little milk to make it easy to stir.
 
Then pour into a shallow baking pan like a lasagna pan, and grate Gruyere cheese on top. Bake at 350F for 40 mins or into until the Gruyere gets light golden brown.
 
Let sit for 30 mins after baking, and enjoy!

You could actually *plant* those sprouting cloves in a pot and grow your
own garlic.

55 is the new 21. Folks used to think, "I don't want to age a day over 21 (the legal drinking age)," but at 55 folks become eligible for the early bird senior buffet special at Golden Corral.
 
In truth, I've only eaten at Golden Corral twice in the last 30 years, and both times were because my young son requested it for a birthday, but man, you let me loose in there and I go for one thing, and one thing only, fried chicken.
 
That reminds me of back in the 1990s, when I worked at the church I'd get off at 2:30, and sometimes I'd do the Long John Silver's all-you-can-eat fish Sundays. Well, then they stopped having the AYCE, so I stopped going there. About a year later, I stopped in because they had some good deal on a poster on their window, and a woman who worked there pointed at me and told a coworker, "That's him. That's the guy who ate 11 pieces of fish."
 
I was like, sure that's a lot, but I couldn't be the only one. She replied that no one had ever eaten that many pieces of fish, and I said, "I ate 12 at the one down on Hampton one time." It was true.
