I was thinking about buying a rabbit in the grocery store and cooking it, but those things are outrageously expensive these days. I see them occasionally in a nearby grocery, but they run $35 or more, and big enough for a little more than two servings. I can get rack of lamb or a couple nice steaks for less. FWIW I never had rabbit as a kid. My father had been raised on a rabbit ranch during the depression. He had eaten too many of them in his youth. |

I have made a heart healthy Thai style mango chicken salad. It has chopped mango and red pepper, and chicken breast that was minced and then fried with about half a finely chopped onion, two cloves of garlic and some hot chili flakes. The the dressing is lime juice and low sodium soy sauce, and then I added some chopped mint and basil. It will be served on chopped romaine. |
