I had white asparagus (the norm in mainland Europe) topped with foie
gras poelé in a restaurant in Strasbourg before starting a biking trip
in Alsace. Unfortunately, it wasn't on the menu a week later when we
returned.

I can only imagine how good that would be. We spent a couple days there
and I have fond memories of the great food. I have to admit I have
never had foie gras. Having lived with gall bladder issues for many
years I rarely ate anything really fatty.
 
I had to laugh at a story my nephew told me when we was a chef at a
winery restaurant in Niagara on the Lake. Someone sent back their order
of foie gras because it was too fatty.

Fresh halibut steaks grilled are excellent, a little s n'p and a
drizzle of butter is all they need. Halibut are large fish, a 1" thk
slab is all you'd need for two meals. The next day halibut steak from
the fridge with horse radish, mayo, and lemom is deelish.

Here's my recipe:

It's a recipe from a local restaurant that I got in a newsletter years ago. I'll give you my slightly modified version:
 
5 lbs potatoes
 
4 cups 40% cream
 
2 heads of fresh garlic (not the stuff in jars!)
 
1 tsp salt
 
1 tsp white pepper (black pepper works too, but makes black specks in the sauce!)
 
Gruyere swiss cheese
 
 
Peel (optional I suppose) and slice up the potatoes into chunk slices about 1/4 inch thick. Peel and mince the garlic, and I pare that little green plant out of the middle of each clove (A PITA, but it's kinda fun too!)
 
In a large pot, put the potato pieces, the cream, the garlic and the salt and pepper and bring to a gentle boil for about 10-15 mins. Thin with a little milk to make it easy to stir.
 
Then pour into a shallow baking pan like a lasagna pan, and grate Gruyere cheese on top. Bake at 350F for 40 mins or into until the Gruyere gets light golden brown.
 
Let sit for 30 mins after baking, and enjoy!

That method has the advantage of suspending the coffee grounds in water. The problem with French press coffee is that sludge on the bottom of the cup and the grounds on your tongue. I find that rather unpleasant.
