I couldn't care less about Cinco de Mayo. Salmon Cakes. Patties. Corn
Doodle Burgers.
 
Yes, using canned salmon. Some canned salmon is better than others. If
you buy the cheap stuff you'll always be disappointed.
 
I'm using Mom's old 1960-ish recipe. It calls for crushed corn chips
rather than flour, crushed saltines or breadcrumbs as a filler.
 
Coursely crush about 1 cup of corn chips between two sheets of waxed
paper. Mom used a rolling pin. I found the heels of my hands worked
just as well at crushing the chips.
 
In a large mixing bowl, flake the drained, boned canned salmon with a
fork. Add the crushed chips. Add a Tbs. or so of minced onion, pepper,
2 beaten eggs and 2 Tbs. Sour cream.
 
Uh, I don't have sour cream. 2 Tbs. prepared mayo gives the mixture the
same tang and texture. I've been using it as a substitute in this salmon
cake/pattie recipe for years :)
 
Mix well together, form into patties and chill in the fridge on a plate
covered in waxed paper. To let set before pan frying.
 
Cook in a skillet in a little neutral oil until patties are golden on
each side. As Mom's recipe stated, "Mixture may be crumbly". No doubt!
But delicious.
 
I'm having asparagus with the salmon patties. For some reason, salmon
in any form seems to pair very well with asparagus. :)

Yes.
 
Duncan Hines makes a pineapple flavored cake mix, the idea being a base for pineapple upside down cake, but it's terribly sweet and somewhat artificial tasting, so good old yellow cake with some pineapple flavor (from juice, with no extra sugar) works well.
 
Just had a piece. YUM! And I say, YUM! again! :-)
 
The margarita wasn't too bad either. :-)

I didn't see the link to an apparent Craigslist Ad because I, too,
have better things to do than waste my time perusing Craigslist.
 
We all know that's how he finds his boarders. I certainly don't give a
shit about what he finds on Craigslist. YMMV

Trust me, you've not missed anything by not seeing those ads. It's a
shame he doesn't put as much effort into finding a job as he does scanning

I charged the new battery for 15 hours before using and now the cordless
vac is like a brand new one. No more zipping through a quick cat litter
vacuum as the battery will be dying in less than 7 minutes. These little
cordless sweepers can spoil you quickly not having to lug out the Dyson Ball.

My guess is that the truth about this covid-19 is mostly worse than we think i.e., we can't handle the truth. The hatred against Chinese-Americans and anybody that looks Chinese is strong on the mainland. It's the same old story. The politicians are going to use fear and racism as tools to manipulate the teaming herds. If things don't get better, I can see a war between the US and China breaking out. I would not doubt that froze potatoes would nose dive. There are a lot
more restaurants selling frozen fries than fresh cut fries, and fries
are a huge seller in restaurants. Just about everything comes with a
side of fries. Fries don't do well in the take out scene. They need to
be eaten hot out of the fryer, and then tend to get limp and soggy in a
take out container.
