That's what we've done every time we've roasted a whole pig. A pig is much easier to cut up after it's cooked than before. The connective tissue is converted to gelatin. Cindy Hamilton |

Here's a local place by where I grew up, Reason's Locker in Buffalo Prairie IL...they have deer, elk and all kinds of stuff, Such places are common in rural areas, we often bought our meat here; there is an instruction sheet for bringing your deers in for processing: http://www.reasonsprairiepride.com/ Reason's Locker has been a family-owned business for over 70 years. We offer custom processing of beef, pork, buffalo, sheep, and also deer. Customers travel many miles for our summer sausage and other smoked products. Our retail business includes beef, buffalo, pork, seafood, and exotic game. We also have Reason's Prairie Creek Market & Deli in Buffalo Praire. Our deli offers fresh, made-to-order sub sandwiches, soup of the day, salads, pie, cookies, etc., along with a large meat case filled with items made at the locker. Catering is another service we provide. We can deliver to large or small parties, or have food prepared to be picked up by the customer. http://www.reasonsprairiepride.com/processinginfo.html How do I arrange to bring an animal in for processing? Step 1: Call the locker. Schedule a date to bring your animal (s) in. Step 2: Animals need to be delivered by 7:15 on the day they are scheduled to be slaughtered. Arrangements can be made ahead of time to bring certain animals the evening before being slaughtered. Step 3: Unload the animal (s) at chute, and place in pen. There will be note cards for the customer to write name, type and number of animals, and which pen animal is located in. Please include phone number. Step 4: Call or stop in the next day to give us instruction on how animal is to be split. (example: who gets 1/2 beef, or 1/2 of 1/2 etc, or hogs) Please Note: Beef hang 2 weeks before being cut and wrapped, but hogs are processed within 2 days. Beef cutting instructions should be given within 7 days of the slaughter date, and hog instructions should be given either prior to slaughter, or by the day of slaughter..." </> |

When a pig is cooked in an imu, it's steamed and smoked with banana leaves. A whole roasted pig is pretty "festive" but it was kind of dry and lacked flavor. The wedding was for the daughter of my wife's late friend. As she was walking down the aisle with her dad, she saw my wife and memories of her mom came flooding back to her and she burst into tears. That was quite a scene. The bride married a Brit. Most of the people there were from the UK. They flew in on the day a major hurricane was supposed to hit this rock. Near as I can figure, the Brits will fly to the other side of the world to celebrate a mate's wedding - never mind a little wind and rain. That's real class and more than a little audacity. https://www.amazon.com/photos/shared/G8hmnrUASLa__9UDmSzNMw.m-uqyPobwVNYQ_79ebnKHb |

Let me guess, Gary...I'd bet dollars to donuts that those shots were also taken with an *extreme* telephoto lens...a few weeks ago that is what happened when peeps were reported "swarming" the only open beaches in SoCal, IIRC it was Orange County... Yesterday I saw some pix from Ocean City, it was a "normal" crowd, but natcherly it was an *extreme* telephoto lens shot...I checked out a local Baltimore station, they had a video report, things looks fairly spaced out on the beach and boardwalk...and it was a decent day... > the ocean water is still cold. > I really need to move away from this area. > <spit> Well, Gary, Illannoy is worse, do not move here! Our PIG spoiled brat $3.4 billionaire "governor" and our dwarf freak shitcago "mayor" are intent on destroying this state so that President Trump can be blamed and thus defeated, and also to get a federal bail-out for our fucked - up IL state budget. I posted this article on my FB feed, and below are my several comments: https://wirepoints.org/never-mind-the-courts-says-pritzker-only-his-view-of-the-science-and-data-matter-wirepoints/ From the above article: "Illinois is being destroyed…llinois now has the harshest emergency pandemic rules in the nation. Pritzker's plan may not ever fully reopen Illinois since that would require a vaccine or complete disappearance of the virus, which may never happen. His right to rule on his own through vast emergency powers likewise has indefinite duration, he has told the courts…What is Pritzker thinking? He is now out of touch — oblivious to the firestorm surrounding his order, disdainful of the rule of law and confident he can dismiss all critics as political grandstanders and much worse…" My comment re: the above article: "Gregory Morrow: Between this "governor" and Chicago's "mayor", this is simply a disgraceful grab for power. Our elected officials serve at *our* "grace and favor", these two forget that. Their tactics are illegal per the US Constitution. And their tactics remind me of how the communists or the nazis eventually took over, they'd start with "emergency powers" during a "crisis", and then... :-( I would *love* to see President Trump move in the National Guard to secure houses of worship. The original shutdown I agreed with, but this...I am truly ashamed to be an Ilinois citizen...I am very concerned about our civil liberties - not to mention the millions of lives that are being ruined in this state alone as a result of these arbitrary and careless policies...this is not a "right" or "left" issue, this is basic common sense..." </> |

The funny part is that everybody knows that there's going to be a second wave of infections but people are powerless to prevent it. My guess is that there's going to be a third wave. At that time this country will just say "screw it" and take the hit. The Asians, of course, are going to be made the scapegoat in all of this. I mean, somebody's got to take the blame, right? |

She had been in her depressive state for well over 5 years but when she was on her high, she bought a fancy-schmancy electric stove and she doesn't cook. She also bought the former owner of my house gas kitchen stove and it was stored in my outbuilding. I went to her door and knocked and asked her when she wanted to remove it and she was in pajamas. The neighbor next door was highly surprised she answered my knock and wanted to know what time I went to her house? It was around noon and he said "Oh, she must have thought you were delivering Meals-on-Wheels." She NEVER went outside unless it was 3:00 a.m. to put her garbage in the can. Her niece took care of a lot of her business but would make her do simple things like call and have someone come mow the yard and such things. |

I have had *tons* of bi - polar clients over the years (I am in "workforce development", meaning that I work to assist low - income/at - need peeps to get jobs)...the vast majority un - diagnosed. Tore my hair out for years, eventually I worked my way up to places that screen for behavioral health issues... I've had many score exactly like Kuthe - intelligent, educated, once had good gigs. But if he does not "get a handle" on his behavioral health issues, he *will* never get a sustainable job, and most likely end up homeless/incarcerated. The best thing for John to do would be to apply for SSDI, because that is what he is going to end up having to do...he will end up losing his property... -- Best Greg |
