We have fallen into a routine of having hamburgers on Saturday nights.
I have to admit that last week's burgers were major disappointment. I
redeemed myself this week. I got regular ground meat from the butcher
about 2 miles down the road from me. I used the same ingredients...
kosher salt, freshly ground pepper, a good pinch of dried garlic and
about a tablespoon of dried bread crumbs. They were grilled on the gas
BBQ and were possibly the best hamburgers I ever had.

What is regular ground meat? If you are making burgers always get the
80/20

Yeah right, TIAD, all ground meat from the butcher down the road... if
you ground your own you'd never go back to that schtinkin' mystery
meat. If you knew anything about food, obviously you know zero, you'd
know that ALL pre ground meat is trimmings, scraps, and nasty
cancerous bits. My grandmother, my mother, and I have never eaten pre
ground meat, we've all ground our own. No real butcher is going to
grind decent roasts, they only grind the poorest quality, ugliest cuts
that no one would buy otherwise.

Well, you know what they say. The first step to solve a problem is to
admit that you have the problem. You're on the right track!

i know some people like bread crumbs in meat to help
keep the juice in, but to me that is meat loaf or
meat balls and not a burger.

to me burger is ground meat only and perhaps some
spices but not much else.

i only cook a burger until it is just done inside
and so it may be slightly pink. in the older days
when meat was more dependable we'd eat our burgers
cold center and flash cooked on the outside on a
hot grill sprinkled with garlic salt only. that
was how things used to be good. now i cook them
more and slower in a pan as we don't have a grill
but with garlic salt. still good, just not as
good...

various tastes and preferences and all that. :)

Did I miss something last week? I don't recall reading your burgers were
a disappointment. What went wrong last Saturday?

Nothing wrong with a routine weekly meal. I can remember when I lived at
home that Friday night was always a breakfast meal and dang good it was,
too!

Granddaughter is staying with me as she starts a new job next week and
is looking for her own place.

The likes to cook so we made Chicken Parm tonight. She did the
seasoning, breading. salad. I fried them but she did the sauce and cheese.

With a red sauce and strong cheese I had a nice bottle of red wine.
Forget who recommended it, may have been Gary. Worked well
complimenting flavors.

Yes, Gary's the goto man if you want advice about combining food and
wine.

sounds good, but i would instead use peanut butter mixed with
powdered sugar instead of peanut butter chips. i really like
peanuts and peanut butter and most peanut butter chips aren't
going to be that good in comparison (and besides they usually
have palm kernel oil which is gross). oh, i'd not bother
chopping the peanuts either and like to use redskins. :)

You're such a difficult, stuck up little fella.

Anyway, I checked the Google archive and it was Cindy who told me that
"colored person" should now be "person of color", because "Colored has

Please address your concerns to the NAACP, although my guess is that they're not real interested in the opinions of racist white boys.

How would they feel about a pseudo-Hawaiian racist who distinguishes
between the various Asians based on whether their view of reality is
as slanted as his own?

Here's a little secret - everybody is racist. Perhaps some blind folks are not - perhaps.

OTOH, some racist will feel the need to hassle other people because of their skin color or appearance. Some racists will feel the need to lynch, or hunt people down and shoot them, or suffocate the life out of people because of the color of their skin.

Mostly, though, racists will just feel that people with different skin color are inferior to themselves, or won't hire different colored folks for jobs, will tell them to go back to where they came from or won't let other folks live where they want to and try to torpedo them in whatever way the can.

It's one of the most natural thing in the world to be racist. OTOH, trying to bring other people down because of the color of their skin is immoral. It's really simple. OTOH, most people are completely unaware of what kind of racist they are.

So lemme see if I get it. Since I don't think people with a different
skin colour than me are inferior to me, I'm not racist. Is that
correct?

Do you think people with another skin colour than you are inferior to
you?

I have to agree, EVERYONE is racist to some degree. I like dark
skinned females but I have absolutely no use for dark skined males...
actually I have no use for any males.

The cultured meat Beyond Meats makes IS meat, just not meat directly from the bodies of animals, but from meat stem cells. No fat though, or bone or gristle.

Here are the ingredients of the Beyond Meat burger:

"Water, Pea Protein*, Expeller-Pressed Canola Oil, Refined Coconut
Oil, Rice Protein, Natural Flavors, Cocoa Butter, Mung Bean Protein,
Methylcellulose, Potato Starch, Apple Extract, Pomegranate Extract,
Salt, Potassium Chloride, Vinegar, Lemon Juice Concentrate, Sunflower
Lecithin, Beet Juice Extract (for color)."

Do you see meat in that list?

The sane goes for American natives, some of whom got along well and some
of whom hated each other with a murderous passion. Their civilizations
and cultures varies a lot. The Aztecs, Incas and the Mayas were quite
advanced. The Maya culture sort of went down the tubes almost 500 years
before contact with the Spanish. The Aztecs were defeated by a small
army of Spanish accompanied by a much larger collection of natives who
allied themselves with the Spanish to topple the hated Aztec. The Incas
had a system of cities, roads, and cities that spanned great distances,
and they were similar cultures in the same general area. Then to the
south and on the other side of the Andes were much more primitive.
North of Mexico there were some cultures that were somewhat advances,
but there were other groups who were quite territorial in protecting the
barren bits of land they controlled.

There were a number of North American cultures were were somewhat
advanced in building, agriculture and government, and then there were
others who were basically clans of hunter gatherers, some of them living
in relative isolation.

Let's face it, most people of white European backgrounds would have
trouble identifying some of them as native, and would have trouble
identifying most of them by their tribe.
