PUt the pecans in the freezer. My pecans are almost 2 years old and
just fine. They are too expensive to risk them going rancid.

The posole was dried corn treated with lye. I got it at the Mesican store. The kernels were huge compared to regular canned hominy. I didn't care for the chewy, corny, goodness of it even though that's what most people are looking for.

I generally have to make it here due to Don's low sodium needs but at
470mg per 1/2 c classico, it's still do-able. Hunts is 560mg per 1/2
cup.
 
What I make at home is about 50mg per 1/2 cup. But still, I keep a jar
around for quick fixes as making a good sauce takes time to meld.
