You won't find a recipe for this in English so here goes: 2lbs peeled, diced potatoes - any variety. 2 seeded diced jalapenos, small 1/2oz bunch epazote stripped of large stems and coarsely chopped, 1/4 cup EVOO, salt, pepper, and 3/4 cup water. Bring it all to boil, cover and cook until done gently tossing a few times.
