I have a close friend who used to work for me when I had the restaurant.
She's young enough to be my daughter and she calls me her "other mother", has since a very long time.
 
I made dinner for her birthday this past Sunday. I did a sous vide chuck roast, 130/48 and it was perfectly medium rare, almost fork tender but not the least bit mushy. Served it with steamed broccoli, a baked potato with all the fixins, and a favorite ice cream . for dessert.
 
I forgot to take pictures except for the plating.

The chuck roast looks perfectly cooked to my taste. I like that
generous pat of butter!

The chuck roast was equivalent to the best prime rib. My main reason for being a fan of sous vide is that you can take a cheap, tough piece of meat and transform it into something sublime.

I thought 'A Moose in Love' started the thread. Are you asking why she
read and replied? I did, in vague hopes of learning something. I'm not
a huge fan of bell peppers, either. I use bell peppers very sparingly.
Don't like the taste or texture.
 
Raw red pepper on a cheese sandwich isn't "cooking". Oh well. Nothing
to see here.

raw mushrooms are good. the only way i eat them is to marinate them in some type of italian dressing. store bought is ok, but better is olive oil, apple cider vinegar, prepared mustard, a bit of oregano, and some minced garlic.

Given the current administration is it something we will live with.
However, it was annoying to have fellow Canadians casting similar
aspersions on people they claimed could simply turn off the alert, or
that they should simply turn off their phones. Well, that doesn't work
for people who are on call or who use their phones for alarm clocks,or
for those who would want to be alerted about a tornado or other disaster
that is headed their way.

Yes, that one did. The kid was okay. If the kid had been found dead or
abused, you would be a person of interest. That is why so many people

Bullshit. The selfishness is in the people who think that their
situation justifies disrupting the sleep of 10 million other people who

Julie's parents did a much better job of treating her with honesty and
openness while raising her. As a result, you could right a book chapter
of the foods she does not like and only a short paragraph on those she

Some years back, in the Spring, a water main leading to Dataw was broken
due to some road construction. The Beaufort/Jasper [county] Water
Authority was going to have to shut off the water for what they said
*could* have been several days. It was suggested people fill bottles
with tap water for drinking and cooking and fill buckets for flushing
the toilets, just in case. People started whining they wouldn't be able
to use their irrigation systems to water the lawn. How silly!
 
My reaction: This is not a drought area. Look out the window. It pours
down rain nearly every afternoon in the Spring; you can practically set
your watch by it. Can't use the irrigation system? What a ridiculous
thing to worry about.
