Those take hours to assemble. By the time a dish is photoworthy enough for a magazine over, it's inedible - if it's even real food and not Play-Doh. I spend no more than 45 seconds plating/arranging/photographing before I eat. Some come out good, other not so great. IDGAS. My photos are for quick inspiration. Half the photos in books and magazines don't even match their recipe and directions anyway. And I don't like the full peel. Peeling them this way gives me little strips of peel for texture and also presentation. The rest goes in the trash or disposal. -sw |

They sit in salt vats for up to 12 months then are desalinated again with fresh water, then flavored with vinegar and whatever the fuck else. "Fresh Pack" only for me.
