The cheap (on sale) whole chickens or chicken parts have no ammonia
sores. You get to see what you're buying. The skins have no sores or cut
off parts.

In Devon in the UK they had Dungeness crabs and you could buy it in
the market already cooked, cleaned and served rather like meat loaf.
When they packed it in the pan they filled the centre with roe and
coloured meat and the white surrounding it. It looked attractive and
was a lovely, lazy way to eat it. You purchased it by the slice.

And just for the record, the *original* Hawaiian rolls were sweet. They
do make at least one or two different varieties now. One is a dinner
roll that's not sweet.

That said, a chuck roast slowly roasted in an oven tastes much better
than a chuck roast slowly boiled in water which you did.

Not true. You still have your 2nd vehicle (Baby2) that burns gas. You do
use it occasionally at least to keep it running. You might not buy gas
often for it but you do, and so much per week.

I'm surprised to hear you say that. I remember when it first happened
you argued with Ed about it. You thought it was excessive force.
 
But yes, I just saw the video again last night. The cop had his gun out
but the perp ignored his command to stop. They walked all the around the
car to the driver's door. Then the guy opened the door and lunged down
to his front seat. That's when the cop fired. For all he knew that guy
was reaching for a gun.
 
I would have shot then too as would any trained cop. It's not a
black/white thing either. That was an extreme dangerous situation for a cop.
 
I was very surprised that the guy survived to complain about it. That
piece of dirt should have died.

It is unfortunate that there are so many people out there who choose to
ignore lawful commands from the police and end up being the authors of
their own misfortune. It troubles me to see the black community making
heroes of career criminals.

The police certainly make mistakes but 98% of these incidences could
have been easily avoided. Just stop, drop your weapon. They are not
rational people though, or they would never be in a situation that
requires police intervention to start with.

Unfortunately, there have been several cases where guy were shot wh
should not have been. These are the guys who protestors should be
rallying behind.
 
Many of these events are caught on video. It is amazing how people can
watch the same videos and see things completely differently. Then there
is the problem of videos catching only what happened at the end. They
tend to miss the events that inspired people to record it.
 
Police shootings are very rare in this region, but there have been three
in the last year, two of them in the last week. Yesterday's happened in
Niagara on the Lake when police were trying to stop a car with a
suspected drunk driver. There ended up being about a dozen cop cars
involved and a spike strip used. There was some sort of altercation and
the guy was shot and later died.

The cops weren't handling it professionally. They should just have
stopped him from getting into his car. But once he did, it was a
threatening situation. Do as the cops say, especially if they've
pulled a gun and are clearly afraid of you.

Pork roasts to 170ºF at 350ºF.
With all roasts:
I use an oven thermometer and a meat thermometer.
I also check in a few places with an insta-read thermometer.
I set an oven shelf so that the roast is at the center of the oven.
I don't often roast pork shoulder, it's better for grinding... for
sausage or pattys. My favorite pork roast is a center cut loin on the
rib bones with the chine bone removed... but I also roast boneless
pork loin, whole ones are usually on sale for under $2 lb, they can
weigh ~12 lbs, I'll make 3 roasts from one... good hot but very good
cold, sliced thin for sandwhiches.
The thought of pulled pork makes me wretch, it's like dog food.

I'm not sure that would be enough to break down the connective tissue
in a shoulder. It would be tough as hell.

Not really relevant to cooking shoulder, then. I cook pork loin to
145 F or perhaps just a bit more. Pink and juicy.
